This is one of several talks at NBC this year that I would consider essential viewing for coffee professionals. Once you understand what Vince is explaining then things make a lot more sense when it comes to many people’s experience with certain brew methods apparently performing better when “underextracting”. Many, correctly, ignored what the meter was telling them and dialled in by taste – which turns out to have been inline all along. If this didn’t make sense, it will after this talk:
