Very interesting article about chocolate

This article was a great read, not so much because it set out to take apart the ridiculous mark ups of a chocolatier from Dallas, but for its insights into chocolate.  Issues of traceability, transparency and understanding your product were all brought up and from time to time I couldn’t help thinking about the coffee industry.  Oh, and I doubt I will be buying Noka chocolate anytime soon….

    I just went to that link and read everything and it was awesome- thanks. I just recently picked up the Chocolate Connoisseur book quoted in that article too, for AU$5.00 which was an amazing buy. It’s an awesome read and there’s a lot in there about tasting that’s very applicable to our coffee as well. :)
