Seasonal Menus
Working on a seasonal coffee menu. Aiming for something a little bit different, if not something totally and utterly different. I have a few ideas - I really want to explore the savoury side of coffee.
Reminds me of the time I fried up some green coffee beans with onion in butter. Developed a very meaty smell. Having chatted to a wise chef about these things it seems a similar reaction was going on as when you cook a little star anise with onions at the start for a meat dish. I can’t remember the group of aromatics that react but they are present in both coffee and star anise - hence the reaction that produced the lovely smells.
One thing I often see in savoury recipes with coffee is duck. I shall investigate…
