I spent the day blending and it was a typical day of coffee breaking my head.

I know that if you give the same blend of beans to five different baristas then more than likely you will get five different drinks (or results in the cup).

Knowing this, as you build a blend how much of the espresso you taste do you attribute to yourself and how much to the actual coffee?

I would never presume that I am capable of perfect extractions time after time after time. I thinnk the only way to really get anywhere is to get somewhere you are happy with and is giving good results and then really work with it – see what appears time and time again (which would be the coffee talking) and see which areas are wobbling (the human error I suppose) and go from there.

I hope this is the way to go anyway – as I take 5 kilos to a big trade show next week…….
