Today I am hoping to be able to do some decent useful research on milk and its viscosity in foam.
What I’d like to end up with is a milk that when foamed stays wet longer, and eventually get that data into the hands of the UK Dairy Council so that we can stop people getting conned by fake “Cappuccino” milks, and buy something useful that will also end up tasting better in the cup.
Is that too hopeful, too much to ask?
Probably. I have a couple of weird little organic powders to play with, might even make the odd movie.
