Milk texture experiments

I may have hit on a way to stabilise microfoam, keeping it wet for longer. This would be most useful if I am allowed to use it in competition. I am going to try and get in touch with the milk sponsor for the UKBC tomorrow.

Had another good session with the Fat Duck and I’m moving closer to a final drink. Would quite like some custom glassware and porcelain and may have found a way into that as well….
