Been offered work by La Spaziale as well as the London School of Coffee (LSC). Was interesting to meet Stephen Hurst yesterday having heard so much about him. Hopefully will be working with everyone!

Going back to the Fat Duck on Sunday. Working on flavour release in sequence so maybe a three or four layered drink with seperate, distinct hits of flavour. That and I have to teach 8 people to texture milk in 30 minutes. Piece of cake.
