Spent Friday with Chris from the Fat Duck

They have just finished building a lab there for more scientific stuff – the only restaurant to have one.

Played with tobacco infused chocolate, infusing oils (and doing odd things with them), cold poaching in liquid nitrogen and all sorts of other fun things. Have a few things I’d like to be moving on with. An amazing place and an amazing bunch of people there….
